Born in 1969 in Rockford, IL, Penny’s birth name is Penelope Papachristodoulopoulos.
She met Chris at the University of Illinois, and they married in 1992. Her degree is in early childhood education. She works part time for the school district and part time at Costas’ Place establishing and maintaining the restaurant’s website.
She is the mother of Allegra, Homer and Nestor, and the grandmother of Evan.
